Why tablespoons to grams isn't one number

⚖️

Volume vs weight: why they differ

A tablespoon measures volume (how much space something occupies). A gram measures mass. The link between the two is density — how tightly packed a substance is. Flour is fluffy and light; salt is dense and compact. That's why 1 tbsp of flour = 7.8 g while 1 tbsp of salt = 17 g — despite occupying the same volume.

🌏

US vs UK vs metric tablespoon sizes

Not all tablespoons are equal. A US tablespoon = 14.79 ml. A metric tablespoon = 15 ml (used in UK, Australia, NZ and most of Europe). An Imperial/UK tablespoon = 17.76 ml — about 20% bigger than a US one. This matters in baking: a UK recipe for 3 tbsp butter means ~50 g, not ~43 g. Always check which system your recipe uses.

🎂

Level vs heaped tablespoons

Recipes always assume level tablespoons unless stated otherwise. A heaped tablespoon can hold up to 50% more by weight — especially for dense powders like cocoa or baking soda. To level: scoop generously, then drag a flat knife or ruler across the top of the spoon. For liquids, fill until the meniscus sits flat.

FAQ

Common questions

Everything about grams in a tablespoon — answered clearly for baking, cooking and nutrition.

It depends entirely on the ingredient. Water: 15 g. Flour: 7.8 g. Sugar: 12.5 g. Butter: 14.2 g. Salt: 17 g. Honey: 21 g. The difference comes from density — a tablespoon always holds the same volume, but heavier ingredients pack more grams into that space. Use the calculator above to find any ingredient instantly.
One level US tablespoon of all-purpose flour weighs approximately 7.8 grams. Bread flour is slightly denser at ~8.0 g. Cake/pastry flour is lighter at ~7.0 g. A heaped tablespoon of all-purpose flour can be up to 12 g. In cups: 1 cup of all-purpose flour ≈ 120 g = 15.4 tablespoons.
One level tablespoon of granulated sugar = 12.5 g. Caster/fine sugar ≈ 12.0 g. Powdered/icing sugar ≈ 7.5–8.0 g (much lighter as it's finely ground with air). Brown sugar (lightly packed) ≈ 12.0 g. Dark brown sugar (firmly packed) ≈ 13.5 g.
One level tablespoon of butter = 14.2 grams. An easy reference: a US butter stick is 113 g and contains 8 tablespoons (each line on the wrapper = 1 tbsp = ~14.2 g). Melted butter weighs the same; only its volume changes slightly.
Table salt (fine): ~17–18 g per tablespoon. Coarse sea salt: ~14–15 g (larger crystals leave more air gaps). Diamond Crystal kosher salt: ~8 g (very coarse, hollow flakes). Morton kosher salt: ~15 g (denser). This is why recipes specify the salt type — using the wrong one can double or halve the sodium in a dish.
No. A US tablespoon = 14.79 ml (~15 ml). A UK Imperial tablespoon = 17.76 ml — about 20% larger. Australia and New Zealand use a metric tablespoon = 20 ml (even bigger!). Most modern international recipes use the metric 15 ml definition. Select your system in the calculator above for the right conversion.
One level tablespoon of ghee = approximately 13.5 grams. Ghee is nearly 100% fat (density ~0.9 g/ml), which is why it's slightly lighter than water. It's very similar to clarified butter — the density is almost identical. For Indian cooking, 1 tbsp of ghee = 13.5 g is the standard conversion.
