Table salt has tiny, uniformly shaped cubic crystals that pack together very tightly with almost no air gaps. This makes it the densest salt by volume — a level tablespoon holds approximately 18 grams. It contains no trace minerals (these are removed during processing) and often includes iodine and anti-caking agents. Because it's so dense, it's also the easiest to over-salt with — a small volume goes a long way.
Kosher salt comes in two completely different crystal structures. Diamond Crystal has large, hollow pyramid-shaped flakes that trap a lot of air — only 8.4g per tablespoon. Morton has denser, compressed flake crystals — about 14.4g per tablespoon. This means that if a recipe was developed with Diamond Crystal and you use Morton kosher, you'll need to use roughly half as much by volume. This is why professional recipes specify the brand, not just "kosher salt."
Salt is approximately 39.3% sodium by weight. One tablespoon of table salt (18g) contains about 6,976mg of sodium — three times the American Heart Association's recommended daily maximum of 2,300mg.
